green bell pepper, diced

Instructions
Pork Meatloaf
Preheat oven to 400 degrees. Spray a 9" loaf pan with nonstick baking spray.
Heat a sauté pan over medium heat with butter. Add the onion and bell pepper. Allow them to cook until the onion is translucent. Let cool.
Add all of the ingredients to a mixing bowl including cooled peppers and onion. Mix until just combined.
Transfer the mixture to the prepared loaf pan and press in until even.
Bake for 50-60 minutes or until the internal temperature is 160 degrees. Let cool for 15 minutes.
Serve with onion gravy and mashed potatoes. Enjoy!
Onion Gravy
Heat a saucepan over medium heat. Add the butter and onions. Allow the onions to cook until translucent.
Whisk together the cornstarch and beef broth. Pour the mixture into the saucepan.
Add the remaining ingredients and cook for 10 minutes or until the gravy has thickened. Taste for salt and pepper.
