  • 2 tbsp Butter
  • 2 cups beef broth

Pork Meatloaf

  • Preheat oven to 400 degrees. Spray a 9" loaf pan with nonstick baking spray.
  • Heat a sauté pan over medium heat with butter. Add the onion and bell pepper. Allow them to cook until the onion is translucent. Let cool.
  • Add all of the ingredients to a mixing bowl including cooled peppers and onion. Mix until just combined.
  • Transfer the mixture to the prepared loaf pan and press in until even.
  • Bake for 50-60 minutes or until the internal temperature is 160 degrees. Let cool for 15 minutes.
  • Serve with onion gravy and mashed potatoes. Enjoy!
