Meal Prep & Ingredient Swaps

A skillet filled with a baked casserole topped with melted cheese, chopped tomatoes, black beans, and fresh cilantro, with a tomato and cilantro in the background.

Cuban Chicken and Rice Skillet: Swap chicken breasts for boneless, skinless chicken thighs for more flavor. Another option is to use leftover or rotisserie chicken. Just skip straight to the peppers.

Two soft tacos filled with Korean short rib, shredded beef, sliced radishes, julienned carrots, fresh cilantro, and a drizzle of sauce, served on a white plate with another taco and a beverage in the background.

Korean Short Rib Tacos: Substitute beef short ribs with pork or chicken for different flavor profiles.

Coconut Chicken Curry: Serve it over basmati rice, spoon it onto warm naan, or even pair it with potatoes or frozen peas for a heartier meal.

A cheeseburger with two beef patties, cheddar cheese, crispy bacon strips, and creamy sauce on a bun, served on a white plate with a side of French fries.

Bacon Cheese Smash Burgers: The sauce actually tastes even better after a day in the fridge. Store it in an airtight container for up to a week. Just give it a stir before using.

A whole Peruvian Chicken with Green Sauce is cut in half and served on a white platter, garnished with fresh herbs, on a wooden table.

Peruvian Chicken with Green Sauce: For smoky goodness, preheat your smoker to 350°F and smoke the chicken for 60-120 minutes or until it reaches 165°F inside. Otherwise, preheat your oven to 400°Fand roast the chicken for about 60 minutes, or until it reaches 165°F.

Banana Cottage Cheese Pancakes topped with melting butter on a white plate.

Banana Cottage Cheese Pancakes: The biggest thing with this batter is not overmixing it after you add the flour. Blend the cottage cheese mixture until completely smooth, but once it meets the dry ingredients, switch to gently stirring.
