So I ended up using chicken instead as that was all I had on hand. I was feeding my in-laws and hubby for his birthday. The pickiest of eaters thought this was delicious and they said they would have it again. It was incredibly easy to make. The prep was fast and I was able to complete it myself without asking for assistance in the kitchen. I did throw in two small potatoes and some onion just to make it a bit more hearty.
