Ingredients

  • 3 cups 1.1 gf flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 1/4 cup vegetable oil
  • 3 eggs
  • 1 cup of banana 2 med
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp of nutmeg
  • 1/2 tsp allspice

Frosting:

  • 1 cup of creamy peanut butter
  • 8 oz cream cheese room temp
  • 4-5 cups powdered sugar
  • 1 tsp vanilla extract
  • 4 tbsp honey
  • 1/2 cup butter room temp
  • 1 tbsp milk
  • 1 tsp cinnamon

Instructions

  • Preheat the oven to 350 degrees and spray two 8" round cake pans with nonstick spray.
  • In a bowl add the eggs and sugars.
  • Mix until slightly frothy, about 3-5 minutes.
  • Add the vegetable oil, vanilla extract, bananas and mix for a couple minutes.

  • Divide in between the cake pans and bake for 35-45 minutes or until a toothpick comes out clean. Cool completely.
  • For a layered cake, cut each cake in in the middle to create 2 even circle layers

  • Add the peanut butter, cinnamon, cream cheese, butter, vanilla, honey, and milk to a large mixing bowl.
  • Mix until smooth.
  • Mix in the powdered sugar by 1 cup at a time.

Notes

Depending on the brand of peanut butter you may need more powdered sugar to make it firm enough to frost a cake.
