How to Make Chicken Smash Burgers
- Season the chicken. Gently combine the ground chicken with the cumin, coriander, salt, pepper, and ancho chile powder.
- Portion it. Divide the chicken mixture into four equal portions and gently form each into a ball.
- Smash and cook. Heat a large cast iron skillet or griddle over medium heat with a little oil. Add the chicken and smash it into a thin patty. Cook until deeply browned, then flip.
- Add the cheese. Top each burger with provolone or white cheddar and allow it to melt while the second side finishes cooking. Chicken should reach 165°F internally. Build the burgers. Layer the chicken onto your buns with green chile, sautéed onions, and a fried egg.
How to Get Crispy Edges on Chicken Smash Burgers
- The pan needs to be properly heated before the chicken goes in. A cast iron skillet or flat-top griddle works especially well because it holds heat and gives the chicken plenty of direct contact with the cooking surface.
- Once the chicken hits the pan, smash it firmly into a thin patty. A small piece of parchment or wax paper between the chicken and spatula helps prevent sticking.
- Then leave it alone.
- You want the chicken to stay in contact with the hot pan long enough to develop those deeply browned edges before flipping. Moving it around too early works against the whole smash burger idea.
Storage + Reheating
- Store the cooked chicken patties separately from the buns and toppings in an airtight container in the refrigerator for up to 3 days.
- Reheat the chicken in a skillet over medium-low heat until warmed through. You can also microwave it, but the skillet does a better job of bringing back some of those crispy edges.
- I recommend cooking the fried eggs fresh when you’re ready to serve the burgers.

Ingredients
Chicken Smash Burgers
- 1 lbs ground chicken
- ¼ tsp cumin
- ¼ tsp coriander
- ½ tsp kosher salt
- ¼ tsp black pepper
- dash of ancho chile powder
Toppings
- green chile
- fried eggs
- provolone or white cheddar
- 1 onion, sliced thin (can sauté first)
- 4 burger buns
Instructions
- Add the ground chicken, cumin, coriander, kosher salt, black pepper, and ancho chile powder to a large mixing bowl. Gently mix just until combined. Do not overmix.
- Divide the chicken mixture into 4 equal portions and loosely form each into a ball.
- Preheat a large cast iron skillet or griddle over medium heat.
- Place one chicken ball onto the hot skillet. Place a small square of parchment or wax paper over the chicken and firmly press down with a spatula to create a thin burger patty.
- Cook for approximately 2-3 minutes, until the bottom is browned and develops crispy edges. Flip and cook for another 2-3 minutes, or until the chicken is completely cooked through and reaches an internal temperature of 165°F.
- Add the cheese during the last minute of cooking and allow it to melt over the burger.
- Repeat with the remaining chicken, working in batches if necessary.
- Place each chicken smash burger onto a bun and top with green chile, sautéed onions, and a fried egg. Serve immediately and enjoy!

- Don’t overwork the chicken: Mix the seasonings into the ground chicken just until combined so the burgers stay tender.
- Get the skillet hot: A properly preheated cast iron skillet or griddle helps create those browned, crispy edges.
- Smash immediately: Press the chicken down as soon as it hits the skillet rather than waiting for it to cook.
