A Taste of the Season

This cake packs a burst of heady spices and Dairy Free eggnog is every bite. Gluten Free Spice Cake with Eggnog frosting combines two seasonal favorites into the perfect cake.

I love eggnog. When that first bottle arrives on the shelves at the store, I love thinking of all the ways I can infuse the rich flavor into various treats. It’s the perfect addition to cakes to add both its incredible deep flavor, but also to add moisture.

Eggnog and spices just belong together. Whether it’s in your glass with that shot of whiskey, or infusing a cake, the two flavors complement each other. Cinnamon, cardamom, allspice, nutmeg, and cloves bring all find a home in this cake. Seasoning each bite they also bring the anticipation as their aroma wafts from the kitchen.

In addition to the spices in the cake, there are also warm spices in the Dairy Free eggnog itself. For this recipe I am using Califia Holiday Nog. The nog has the addition of nutmeg, cloves, and ginger.

Mixing Up Your Gluten Free Spice Cake with Eggnog Frosting

With just a handful of pantry staples, this cake comes together just as easily as opening up a box mix. Unlike making a box mix though you have control of each and every ingredient. Let’s take it step by step.

  • Pregame! Preheat your oven to 350 degrees. Spray a 9×13 baking dish or cake pan with nonstick baking spray and set it aside.
  • Add your eggs, eggnog, sugar, and oil to a bowl and mix on high for five minutes. The oil will give this cake that moist tender texture.
  • Add the rest of your ingredients and mix until they are just incorporated.
  • Pour the batter into the prepared baking dish. Bake your Gluten Free Spice Cake with Eggnog Frosting for 35-40 minutes or until a toothpick comes out clean.
  • Always allow your cake to cool completely before frosting it. You don’t want to melt that light, airy, creamy cloud of frosting.
  • To make your frosting make sure your Dairy Free cream cheese and butter are at room temperature. This will allow it to mix easily and stay creamy and lump free. Add all of your ingredients to a bowl and mix until smooth and luscious. Depending on the brand of eggnog you use you may need to add a little additional sugar so taste before frosting.

Ingredients

Eggnog Spice Cake

  • 2 1/2 cups Gluten Free 1.1 flour
  • 2 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 cup vegetable oil
  • 1 cup Dairy Free eggnog
  • 1 3/4 cups brown sugar
  • 4 eggs
  • 1/2 tsp cardamom
  • 2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/2 tsp nutmeg
  • pinch of allspice
  • 1/2 tsp salt
  • 2 tsp vanilla extract

Eggnog Cream Cheese Frosting

  • 1/2 cup Dairy Free butter, room temperature
  • 8 oz Dairy Free cream cheese, room temperature
  • 1 tsp vanilla extract
  • 5 cups powdered sugar
  • 3 tbsp Dairy Free eggnog
  • *Nutmeg for topping

Instructions

Eggnog Spice Cake

  • Preheat your oven to 350 degrees. Spray a 9×13 baking dish or cake pan with nonstick baking spray and set aside.
  • Add your eggs, sugar, oil, and eggnog to a bowl and mix on high for 5 minutes.
  • Add the remaining ingredients and mix until just combined.
  • Pour batter into prepared baking dish. Bake for 35-40 minutes or until a toothpick comes out clean.
  • Allow to cool completely before frosting.

Eggnog Cream Cheese Frosting

  • Add ingredients to a bowl and mix until smooth and creamy, approximately 5 minutes.
  • Taste for sweetness. Add additional sugar if desired.
  • Frost cake, Garnish with a sprinkle of nutmeg. Enjoy!
