    Roasted chicken and brussels sprouts basted in a balsamic spiced rum sauce with cherries makes for an elegant and easy dinner.

    Equipment

    • Cast iron skillet or baking dish
    • saucepan

    Ingredients

    • 2 lbs chicken thighs
    • 3 cups Brussels sprouts, trimmed, cut in half
    • 1 tsp kosher salt
    • ½ tsp black pepper
    • 1 tbsp garlic olive oil
    • 2 cups cherries, pitted
    • ½ cup balsamic vinegar
    • 1 tbsp honey
    • ½ cup spiced rum
    • 2 tsp fresh thyme, chopped
    • 1 cinnamon stick

    Instructions

    • Preheat oven to 425 degrees.
    • Add the Brussels sprouts to the baking dish. Drizzle with garlic olive oil.
    • Place chicken on top of the Brussels sprouts. Season with salt and pepper.
    • Bake for 20-30 minutes until the chicken skin is golden and crispy and the internal temp reads 165.
    • While the chicken is roasting, add the remaining ingredients to a saucepan along with a pinch of salt and pepper.
    • Cook over medium heat, stirring occasionally, until sauce is reduced and glossy. Taste for seasoning. Remove cinnamon stick.
    • Pour sauce over the chicken and Brussels sprouts. Enjoy!
