One of the things I love most about tacos are their endless possibilities. On days my husband and I are lucky fishing, it could be fish tacos for dinner. On night I’m craving steak, I am all about the steak taco. These crispy taquitos are perfect for when I both want something different and am a little short on time.

Weeknight Staple

One of my favorite things for helping make a weeknight dinner come together quickly and fuss free is a rotisserie chicken. As much as I love cooking my own chicken sometimes you just need that little help. When my husband went out of town recently for work I actually stocked my fridge with this store staple just to give myself a little break!

I promised this dish was easy and will take care of those taco cravings in a hurry. Let’s taco taquitos!

First, you need to build your filling. To help this come together quickly and easily make sure your Dairy Free cream cheese is at room temperature.

When it comes to the chicken, as I mentioned I used a rotisserie chicken for this dish, but feel free to use whatever leftover chicken you have. You can use all white meat, all dark meat, or a combination. Use what you like and give it a shred.

When filling your taquitos, you want to make sure you don’t over stuff them. While it is tempting to fill these too bursting, the filling is that good, you do want these to close.

Make sure your oil is fully heated before adding your taquitos. I recommend using either coconut oil or vegetable oil, but feel free to use your favorites. Place the taquitos in seam side down. This will allow them to set. Don’t flip them until you start to see the sides get golden brown. Part of what makes these so good is that crunch!

Allow your taquitos to drain on paper towel. This will give you time to set out all of your toppings and sides for your Dairy Free Pulled Chicken Taquitos. Make sure you have fun with the toppings too! Avocado, cilantro, and corn are all colorful and tasty additions.

Equipment

  • Mixing Bowl
  • Large skillet

Ingredients

  • 8 oz Dairy Free cream cheese
  • 3 cups cooked chicken, shredded I used a rotisserie
  • 1 tbsp Taco Tuesday seasoning
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • Gluten Free tortillas
  • 1/2 cup coconut or vegetable oil

Toppings and Sides

  • rice, refried beans, fresh cilantro, avocado, roasted corn, and limes

Instructions

  • In a bowl combine the cream cheese, chicken, and seasonings.
  • Add oil to a large skillet and heat on medium/low.
  • Add 1/4 cup of the filling to a tortilla.
  • Roll tightly and place seam side down into the hot oil.
  • Cook the first side for 3-4 minutes until you start to see the sides turn golden brown. Flip and cook the other side 3-4 minutes.
  • Place on a paper towel lined plate and allow to drain.
  • Serve with your favorite sides and toppings. Enjoy!
