The crispy tortilla, the melty cheese, the seasoned beef, and that creamy avocado cilantro sauce all come together in the best way. These are so good and always such a fun dinner.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion, diced
  • 1/2 green pepper, diced
  • 1 packet taco seasoning
  • 1/2 tsp kosher salt
  • 1/2 cup water
  • 10 flour taco-sized tortillas
  • 10 oz Monterey Jack cheese, shredded
  • 2 tbsp avocado oil

  • 1 large avocado
  • 1 lime, juiced
  • 3/4 cup water
  • 1/2 tsp salt
  • 1/2 cup Greek yogurt or sour cream
  • 1 cup cilantro
  • 1/8 tsp garlic powder

Instructions
 

  • Add the avocado, lime juice, water, salt, Greek yogurt or sour cream, cilantro, and garlic powder to a blender. Blend until smooth and set aside.
  • Place a skillet over medium heat and add the ground beef.
  • Cook the beef partway, then add the diced onion and diced green pepper.
  • Reduce the heat to low and cook until the onion is softened and translucent.
  • Add the kosher salt, taco seasoning, and water. Stir well.
  • Continue cooking until the sauce thickens and the beef mixture is well coated.
  • Place a large skillet over medium heat.
  • Add 1 tablespoon of avocado oil at a time.
  • Take one tortilla and sprinkle cheese over one half.
  • Add about 1/4 cup of the beef mixture on top of the cheese.
  • Fold the tortilla in half and place it in the skillet.
  • Press down gently with a spatula and cook until browned and crispy.
  • Flip and cook the other side until golden and the cheese is melted.
  • Repeat with the remaining tortillas, cheese, beef mixture, and oil.
  • Serve warm with the avocado cilantro sauce.
