Crispy Cheesy Beef Tacos
Crispy Cheesy Beef Tacos are filled with seasoned ground beef, melty Monterey Jack cheese, and pan-crisped flour tortillas, then served with a creamy avocado cilantro sauce. They’re an easy taco dinner with big flavor and crispy, cheesy edges.

- 1 lb ground beef
- 1 small onion, diced
- 1/2 green pepper, diced
- 1 packet taco seasoning
- 1/2 tsp kosher salt
- 1/2 cup water
- 10 flour taco-sized tortillas
- 10 oz Monterey Jack cheese, shredded
- 2 tbsp avocado oil
Avacado Cilantro Sauce
- 1 large avocado
- 1 lime, juiced
- 3/4 cup water
- 1/2 tsp salt
- 1/2 cup Greek yogurt or sour cream
- 1 cup cilantro
- 1/8 tsp garlic powder
Instructions
- Add the avocado, lime juice, water, salt, Greek yogurt or sour cream, cilantro, and garlic powder to a blender. Blend until smooth and set aside.
- Place a skillet over medium heat and add the ground beef.
- Cook the beef partway, then add the diced onion and diced green pepper.
- Reduce the heat to low and cook until the onion is softened and translucent.
- Add the kosher salt, taco seasoning, and water. Stir well.
- Continue cooking until the sauce thickens and the beef mixture is well coated.
- Place a large skillet over medium heat.
- Add 1 tablespoon of avocado oil at a time.
- Take one tortilla and sprinkle cheese over one half.
- Add about 1/4 cup of the beef mixture on top of the cheese.
- Fold the tortilla in half and place it in the skillet.
- Press down gently with a spatula and cook until browned and crispy.
- Flip and cook the other side until golden and the cheese is melted.
- Repeat with the remaining tortillas, cheese, beef mixture, and oil.
- Serve warm with the avocado cilantro sauce.
Notes
- Cook the beef mixture until the liquid reduces so the tacos stay crisp and not soggy.
- Add the cheese all the way to the edges of the tortilla for the best crispy cheesy texture.
- Use medium heat so the tortillas get golden and crisp without burning.
- Press the tacos gently with a spatula while cooking to help them brown evenly.
- The avocado cilantro sauce can be made ahead and kept in the fridge until ready to serve.
