Some nights I want dinner to be fresh and light and full of vegetables. And then there are nights when I want THIS.
Cheese. Ranch. Bacon. Potatoes. Chicken. 😂
There is absolutely nothing subtle happening here, and that’s exactly why I love it.
I usually grab a rotisserie chicken because we’re already keeping things easy, and frozen shredded hash browns mean there’s no peeling, chopping, or cooking potatoes. Mix everything together, pile it into the casserole dish, cover it with even more cheese and bacon, and into the oven it goes.
And the white cheddar! You can absolutely use your favorite cheddar, but I love white cheddar here. It gets melty and gooey and works SO well with the ranch and bacon.

This is the kind of dinner I make when everyone is hungry and I don’t want to hear, “What’s for dinner?” followed by suspicious looks. 😂 It’s warm, creamy, cheesy, filling, and the crispy bacon on top makes every bite better.
