Gluten Free Spiced Pumpkin Raisin Muffins

These Gluten and Dairy free muffins are packed with warm spices and the sweetness of bananas. Crunchy pecans and pepitas provide texture.

Ingredients

  • 1 cup canned pumpkin
  • 2 ripe bananas
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup coconut oil, melted
  • 1/4 tsp nutmeg
  • pinch of allspice
  • 1/2 tsp kosher salt
  • 1 cup sugar
  • 1 tsp cinnamon
  • 1 3/4 cup Gluten Free 1.1 flour
  • 2 tsp baking powder
  • 1/2 cup raisins
  • pepitas and chopped pecans for topping

Instructions

  • Preheat the oven to 400 degrees.
  • Line your muffin tin with cupcake liners.
  • In a mixing bowl add your pumpkin, bananas, eggs, sugar, and vanilla. Mix well until the sugar is dissolved.
  • Add the rest of your ingredients to the bowl and mix until just combined.
  • Using an ice cream scoop or measuring cup, evenly distribute your batter into the muffin tin, filling about 2/3 of the cup.
  • Sprinkle the pepitas and chopped pecans over the top.
  • Bake at 400 degrees for 5 minutes and then reduce the temp to 350 and bake for 20-30 minutes more or until the tops are golden brown and a tooth pick comes out clean. Enjoy!
