Ingredients

  • 1 ½ cups 1.1 GF Flour
  • ½ tsp allspice
  • ½ tsp ground cinnamon
  • 2 eggs
  • 1 tsp baking soda
  • ¼ cup brown sugar
  • ½ cup granulated sugar
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • ½ cup apple cider

Frosting

  • 8 oz cream cheese room temperature
  • 8 tbsp butter room temperature
  • 2 ½ cups powdered sugar
  • 2 tsp vanilla extract
  • 2 tbsp milk

Instructions

For the Cupcakes

  • Preheat the oven to 350 degrees.
  • Line 12 muffin tins with cupcake liners.
  • In a mixing bowl, combine brown sugar, granulated sugar, eggs, and vegetable oil. Mix for 3 minutes until the mixture is well combined.
  • Mix in the apple cider and vanilla extract.
  • In a separate bowl, mix all the dry ingredients: all-purpose flour, allspice, ground cinnamon, and baking soda. Combine well.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing until you have a smooth cupcake batter.
  • Scoop the batter into the muffin tin liners, filling each about two-thirds full.
  • Bake for 15-18 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  • Allow the cupcakes to cool completely before frosting.

For the Frosting

  • In a mixing bowl, combine the cream cheese, butter, powdered sugar, vanilla extract, and milk. Mix until the frosting is smooth.
  • Pipe the frosting onto the cooled cupcakes.

Notes

If the frosting is too runny and not pipeable, add powdered sugar in 1/4 cup increments until it reaches the desired firmness.
