- 1 ½ cups 1.1 GF Flour
- ½ tsp allspice
- ½ tsp ground cinnamon
- 2 eggs
- 1 tsp baking soda
- ¼ cup brown sugar
- ½ cup granulated sugar
- ½ cup vegetable oil
- 2 tsp vanilla extract
- ½ cup apple cider
Frosting
- 8 oz cream cheese room temperature
- 8 tbsp butter room temperature
- 2 ½ cups powdered sugar
- 2 tsp vanilla extract
- 2 tbsp milk
For the Cupcakes
Preheat the oven to 350 degrees.
Line 12 muffin tins with cupcake liners.
In a mixing bowl, combine brown sugar, granulated sugar, eggs, and vegetable oil. Mix for 3 minutes until the mixture is well combined.
Mix in the apple cider and vanilla extract.
In a separate bowl, mix all the dry ingredients: all-purpose flour, allspice, ground cinnamon, and baking soda. Combine well.
Gradually add the dry ingredient mixture to the wet ingredients, mixing until you have a smooth cupcake batter.
Scoop the batter into the muffin tin liners, filling each about two-thirds full.
Bake for 15-18 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
Allow the cupcakes to cool completely before frosting.
For the Frosting
In a mixing bowl, combine the cream cheese, butter, powdered sugar, vanilla extract, and milk. Mix until the frosting is smooth.
Pipe the frosting onto the cooled cupcakes.
If the frosting is too runny and not pipeable, add powdered sugar in 1/4 cup increments until it reaches the desired firmness.
