Dairy Free Creamy Tuscan Salmon with Spinach

This 30 minute skillet meal combines salmon with a decadent sauce accented with sweet sundried tomatoes and vibrant spinach.

Equipment

Ingredients

  • 1 lbs Bluehouse Salmon filets
  • 4 cups baby spinach
  • 2 tsp garlic, minced
  • 1 tsp olive oil
  • 3 oz sundried tomatoes, julienned
  • 1/4 cup Dairy Free heavy cream
  • 14 oz lite foconut milk
  • 1/4 tsp kosher salt
  • pinch of black pepper
  • 1 tbsp balsamic glaze

Instructions

  • Heat a large skillet with a lid over medium-low heat.
  • Add your salmon filets, skin side down, to the pan. Cover and cook for 5 minutes.
  • Remove the salmon and set aside.
  • To the same pan add your garlic and spinach. Allow the spinach to wilt, stirring occasionally.
  • Add your remaining ingredients and allow the sauce to reduce and thicken, 5-8 minutes.
  • Add your salmon back to the pan and spoon some of the sauce over the top.
  • Cook for an additional 5 minutes. Check to make sure the salmon is fork tender, or your desired temperature. Enjoy!
