Ingredients

  • 2 cups 1.1 GF flour
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 ½ tsp kosher salt
  • 1 ½ tsp baking soda
  • 1 tsp baking powder
  • 1 ½ cups creamy peanut butter + 1 tbsp for topping
  • 1 tbsp vanilla extract
  • 16 tbsp butter, room temperature
  • 2 eggs
  • cup raspberry jelly or your favorite flavor
  • 2 tbsp chopped peanuts

Instructions

  • Preheat the oven to 350°F. Line four cookie sheets with parchment paper.
  • In a mixing bowl, combine the butter and sugars, and mix on high for 5 minutes until creamy.
  • Add in the eggs, vanilla extract, and peanut butter. Mix until well combined.
  • Gradually add the dry ingredients (flour, kosher salt, baking soda, baking powder) into the mixture. Mix until just incorporated. Avoid over-mixing to maintain the texture.
  • Use an ice cream scoop to form equal-sized cookie dough balls. Place them on the prepared baking sheets.
  • Using a fork, gently press down on each cookie in a criss-cross pattern.
  • Top each cookie with approximately 1 teaspoon of jelly, spreading it slightly on top.
  • Bake for 11-13 minutes until the edges turn slightly golden brown.
  • Allow the cookies to cool on the baking sheet for 10 minutes, then transfer them to a wire rack to cool completely.
  • Drizzle a little peanut butter on top of each cooled cookie and sprinkle with chopped peanuts.
