Ham Corn Chowder

Who loves soup season? This chowder is so easy to make and is ready in about 30 minutes! The star ingredient is @collegeinnbrand Vegetable Stock. Their stock tastes like homemade stock, and it adds a great depth of flavor. College Inn vegetable stock is a must have pantry staple.

Ingredients

  • 32 oz College Inn Vegetable Stock
  • 8 oz smoked ham cubed
  • 3 cups red potatoes cubed (1-inch pieces)
  • 2 cups heavy cream
  • 1 tbsp cornstarch
  • 1 onion diced
  • 2 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp thyme
  • 3 tbsp butter
  • ½ tsp smoked paprika
  • 1 tsp minced garlic
  • 15 oz can of corn drained

Instructions

  • Place a large pot over medium heat and add the butter and diced onion. Sauté the onion until it becomes translucent.
  • Add the cubed ham, kosher salt, black pepper, thyme, minced garlic, red potatoes, drained corn, and vegetable stock to the pot.
  • Cook this mixture for about 15-20 minutes, or until the red potatoes are fork tender.
  • While the soup is cooking, in a separate bowl, combine the heavy cream and cornstarch, mixing well until smooth.
  • Add the cream-cornstarch mixture to the soup and continue to cook for an additional 10-15 minutes or until the soup thickens.
  • Sprinkle the smoked paprika into the soup and give it a final stir.
  • Once the soup has thickened to your liking, it's ready to be served.
  • Enjoy!
