Ingredients

  • 1 cup gluten-free flour 1.1 GF flour
  • ½ cup brown sugar
  • cup sugar
  • ¾ tsp kosher salt
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ¾ cup creamy or crunchy peanut butter
  • 2 tsp vanilla extract
  • 8 tbsp butter at room temperature
  • 1 egg
  • 1 cup cooked bacon chopped

Instructions

  • Preheat your oven to 350 degrees. Line two cookie sheets with parchment paper.
  • In a mixing bowl, combine the butter and sugars. Mix on high for 5 minutes until creamy.
  • Add the egg, vanilla, and peanut butter to the mixture.
  • Gradually add the dry ingredients and mix until just combined. Avoid over-mixing to maintain the desired texture.
  • Gently fold in the chopped cooked bacon.
  • Use an ice cream scoop to portion out equal-sized cookies on the prepared sheets.
  • Using a fork, press down gently in a criss-cross direction on each cookie.
  • Bake for 11-13 minutes until the edges turn slightly golden brown.
  • Allow the cookies to cool on the baking sheet for 10 minutes, then transfer them to a wire rack to cool completely.
