Ingredients – 2-3 lb chuck roast – 5 onions thinly sliced – 6 sprigs fresh thyme or 1 1/2 tsp dried thyme leaves – 2 tbsp Worcestershire sauce – 3 ½ tsp kosher salt – ½ tsp black pepper – 3 cups beef stock – 3 garlic cloves minced – 1 tbsp olive oil – For Gravy: 2 tbsp cornstarch + 3 tbsp water mixed
