Gluten and Dairy Free Maple Bacon Banana Cake

Bacon makes everything better, including this maple kissed banana cake topped with a luscious and silky Dairy Free cream cheese maple frosting.

Ingredients

Bacon Banana Cake

  • 2 1/3 cup Gluten Free 1.1 flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1 1/3 cup sugar
  • 3/4 cup Dairy Free unsalted butter, room temperature
  • 1 1/2 cup mashed ripe bananas
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup walnuts
  • 5 strip bacon, cooked and chopped, plus optional extra for topping
  • 4 tbsp maple cream can substitute with maple syrup

Maple Cream Cheese Frosting

  • 16 oz Dairy Free cream cheese, room temperature
  • 3 cups powdered sugar
  • 1 tsp vanilla
  • 2 tbsp maple cream can substitute with maple syrup

Instructions

Bacon Banana Cake

  • Preheat oven to 350 degrees. Spray a 9x13 cake pan with nonstick baking spray and set aside.
  • Add your eggs and sugar to a bowl and mix for a couple of minutes until the sugar is mostly dissolved and the eggs are frothy.
  • Add in your bananas, butter, maple cream, and vanilla extract. Mix to combine.
  • Add your flour, cinnamon, salt, and baking powder. Mix until just combined.
  • Fold in your walnuts and bacon.
  • Spread the batter into the prepared baking dish. Bake for 30-35 minutes, or until the top is lightly golden brown and a toothpick comes out clean. Allow to cool completely.
  • Once cooled spread the maple cream cheese frosting onto the cake. If desired, top with additional bacon, walnuts, and banana slices.
  • Enjoy!

  • Add all of the ingredients to a bowl and mix until silky and smooth.
