1 1/2cupmashed ripe bananas
2eggs

5strip bacon, cooked and chopped, plus optional extra for topping

Maple Cream Cheese Frosting
16ozDairy Free cream cheese, room temperature
3cupspowdered sugar
1tspvanilla

Instructions
Bacon Banana Cake
Preheat oven to 350 degrees. Spray a 9x13 cake pan with nonstick baking spray and set aside.
Add your eggs and sugar to a bowl and mix for a couple of minutes until the sugar is mostly dissolved and the eggs are frothy.
Add in your bananas, butter, maple cream, and vanilla extract. Mix to combine.
Add your flour, cinnamon, salt, and baking powder. Mix until just combined.
Fold in your walnuts and bacon.
Spread the batter into the prepared baking dish. Bake for 30-35 minutes, or until the top is lightly golden brown and a toothpick comes out clean. Allow to cool completely.
Once cooled spread the maple cream cheese frosting onto the cake. If desired, top with additional bacon, walnuts, and banana slices.
