Gluten Free Peanut Butter Bacon French Toast

  • 2 shallow bowls
  • 1 Large skillet

Ingredients

  • 8 slices Gluten Free bread
  • 1 cup Pork Panko
  • 1 egg
  • 1 cup Dairy Free milk
  • 4 tbsp sugar, divided
  • 2 tsp cinnamon, divided
  • 1 tsp vanilla extract
  • 1 cup peanut butter
  • 1 lbs bacon, cooked
  • 4 tbsp Dairy Free butter
  • maple syrup for serving

Instructions

  • Add your Pork Panko, 1 tsp cinnamon, and 1 tsp sugar to a blender. Blend until the Pork Panko is a fine, sandy crumb. Pour into a shallow bowl.
  • In a seperate shallow bowl whisk together the egg, milk, vanilla, and remaining sugar and cinnamon.
  • Take two slices of bread. Spread peanut butter on either side. Top one side with bacon and sandwich together. Repeat with the remaining bread to make 4 sandwiches.
  • Dip both sides of the sandwich into the egg mixture. Dip both sides of the sandwich into the Pork Panko, making sure it's fully encruted.
  • Heat a large skillet over medium heat with the butter. Once the butter is melted and the skillet is hot add your sandwiches, careful not to crowd. You can cook thenm in batches.
  • Allow them to brown 3-4 minutes on the first side before flipping them and cooking them another 3-4 minutes.
  • Top with maple syrup.
