Gluten Free Ratatouille Pasta with Ground Beef
This colorful and fresh 30-minute meal combines a bounty of vegetables with lean ground beef.
1 Large skillet
Lara's Lean ground beef
orange bell pepper, chopped
yellow bell pepper, chopped
red bell pepper, chopped
eggplant, peeled and chopped
yellow squash, cubed
fresh basil, chopped
Gluten Free protein pasta
Cook the pasta according to the package directions. Drain and set aside.
Heat a large skillet over medium heat. Add the ground beef. Use the spoon to break up the beef as it cooks. Cook until browned. Remove from pan and set aside.
Add the olive oil and onion to the pan. Sauté the onion until it's translucent, 4-5 minutes.
Add the rest of the vegetables and the seasonings. Cook the vegetables 5-8 minutes until they're tender-crisp.
Add the ground beef and pasta into the pan. Toss to combine.
Top the pasta with the basil.
