Gluten Free Almond Double Berry Muffins

These easy muffins combine fresh ingredient with a favorite pantry staple for the perfect on the go treat.

  • muffin tin

Ingredients

  • 2 cups Gluten Free muffin mix
  • 3 eggs
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 cup oat milk
  • 1 tsp almond extract
  • 1/2 cup Dairy Free butter, room temperature
  • 1 cup oats
  • 1/2 cup blackberries
  • 1/2 cup raspberries
  • 1/2 cup slivered almonds *reserved for topping

Instructions

  • Preheat oven to 350 degrees. Spray a muffin pan with nonstick baking spray and set aside.
  • Mix together all of the ingredients except for the berries.
  • Fold in the berries.
  • Divide the batter between the 12 cups in the muffin tin.
  • Top with slivered almonds.
  • Bake for 20-30 minutes, or until a toothpick comes out clean.
