Heat a medium sauce pan over medium-low heat. Add all of the ingredients.
As the strawberry sauce cooks use a masher to smash the strawberries down some to desired texture. Allow to cook 15 minutes until thickened and reduced and the sugar is dissolved. Set aside.
Wine Chateau Sauce
Bring a pot filled half way with water to a boil and then turn down to a simmer.
Whisk the egg yolks and sugar together until the sugar is mostly dissolved.
Fit the bowl over the top of the simmering water creating a double boiler. You don't want the water to touch the bottom of the bowl.
Continue to whisk until the egg mixture begins to get a little foamy.
Add half of the wine and continue to whisk. Once the yolks have begun to thicken and have lightened in color add the remaining wine.
Whisk for five more minutes. The sauce should be pale yellow and thickened.
Crepes
Prepare crepes according to package directions.
To assemble, fold crepes. Top with the wine sauce and then the strawberry sauce. Add a sprinkle of fresh strawberries. Enjoy!
