Gluten Free Cherry Cobbler

Equipment

  • Mixing Bowl
  • 10" cast iron pan or baking dish

Ingredients

Cobbler Filling

  • 16 oz frozen cherries
  • pinch of salt
  • 1/2 cup sugar
  • 1 tsp orange zest
  • 1 blood orange, juiced (may substitute with regular orange)

Cobbler Topping

  • 4 tbsp butter, melted Dairy Free
  • 1 cup Gluten Free flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • 3/4 cup almond milk
  • pinch of salt
  • slivered almonds for topping (optional)

Instructions

Cobbler Flilling

  • Preheat oven to 350
  • In a pot over medium heat, add the cobbler filling ingredients. Stir to incorporate
  • Continue occasionally stirring and cook the ingredients for 10 minutes, or until the sugar has dissolved, the syrup has slightly thickened, and the cherries have begun to soften.
  • Pour into the cast iron skillet

Cobbler Topping

  • In a bowl, combine the wet ingredients and dry ingredients, stirring until just combined.
  • Scoop onto the cherry filling.
  • Bake 35-45 minutes, or until the top is golden brown.
  • Allow to cool several minutes and then serve warm.
