Glazed Cinnamon Raisin Biscuits

  • 1 Mixing Bowl
  • 1 pastry cutter
  • 1 3" biscuit cutter
  • 1 9" cast iron skillet or 7x10 baking dish
  • 1 pastry brush

Ingredients

Cinnamin Raisin Biscuits

  • 2 1/4 cups Gluten Free 1.1 flour
  • 8 tbsp vegetable shortening
  • 1 1/4 tsp kosher salt
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1 cup raisins
  • 1/2 tsp baking soda
  • 1 tbsp baking powder
  • 1 cup buttermilk for dairy free butter milk combine 1 cup oat milk with 1 tsp vinegar. Stir to combine.

Cinnamon Glaze

  • 2 tsp milk, you may need an additional 1 tsp
  • 1 1/2 cups powdered sugar
  • 1/2 tsp cinnamon

Instructions

  • Preheat the oven to 450 degrees.
  • Brush a 9" cast iron skillet or 7x10 baking dish with 1 tbsp of butter and set aside.
  • Add the oat milk and vinegar to a bowl and stir to combine.
  • Add the dry ingredients to a bowl and mix.
  • Add the vegetable shortening to the dry ingredients. Use a pastry cutter to cut the shortening into the dry ingredients. It should be a sandy, pebbled textured.
  • Add the buttermilk and raisins and mix to just combine. Be careful not to overmix.
  • Roll the dough out until it is 1/2" to 2/3" thick.
  • Use a 3" biscuit cutter to cut out your biscuits. Place them into the prepared baking dish.
  • Let the biscuits bake for 17-20 minutes, or until lightly golden brown on top.
  • Let cool slightly.
  • Mix together the ingredients for the glaze until smooth.
  • Brush the glaze onto the warm biscuits.
  • Enjoy!
