Decadent Orange Marmalade Creamsicle Rolls

Ingredients

Orange Creamsicle Rolls

  • 6 tbsp Dairy Free butter
  • 1 cup milk
  • 1 tbsp honey
  • 1/3 cup sugar
  • 1 cup warm water, 110 degrees
  • 1 egg
  • 5 oz Dairy Free plain yogurt
  • 1 tsp cake batter extract
  • 1/2 cup freshly squeezed orange juice
  • 4 tbsp orange zest
  • 1 tsp kosher salt
  • 1 pkg instant active yeast
  • 3 1/2 cups Gluten Free 1.1 flour, plus 1/2-1 cup for working the dough
  • 16 oz orange marmalade
  • 1 cup Dairy Free heavy cream
  • 1 cup mini marshmallows

Vanilla Frosting

  • 1/2 cup Dairy Free butter, room temperature
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp Dairy Free milk

Instructions

  • Butter a 9x13 baking dish and set aside.
  • Add the yeast, warm water, half of the sugar, and honey to a bowl. Stir to combine. Allow it to sit for 5 minutes. It will begin to bubble and foam.
  • Add the remaining sugar, milk, butter, and salt to a saucepan over medium heat. Let it begin to scald with bubbles just forming around the edges, but not come to a boil. Remove from the heat and allow it to partially cool.
  • Add the egg, yogurt, orange juice and zest, and extract to a mixing bowl fit with a paddle. Mix to combine.
  • With the mixer running pour in the yeast mixture.
  • While the mixer is running slowly drizzle in the milk mixture.
  • Add 1/2 cup of flour at a time to the bowl, waiting for it to mix in before adding the next. Once all of the flour has been added mix for an additional minute.
  • Lightly flour your work surface and the dough.
  • Roll your dough out until it is about a 9x12".
  • Spread the orange marmalade over the dough. Sprinkle the marshmallows over the top.
  • Tightly roll up the dough. Cut it into 8 rolls. Place the rolls into the buttered baking dish.
  • Cover the baking dish with plastic wrap and a towel. Place it in a warm place. Allow it to rise to 1 1/2 times its size, about an hour.
  • Preheat the oven to 350 degrees.
  • Uncover the rolls. Drizzle the heavy cream around the rolls.
  • Bake the rolls for 30 minutes or until golden brown. Let cool completely.
  • Add all of your ingredients for the frosting to a mixing bowl. Mix until smooth and creamy.
  • Spread the frosting over the top of the rolls. Garnish with extra zest if desired.
