Almond French Toast "Bostock"

This baked French toast is stuffed with an almond filling, similar to the traditional French Pastry Bostock.

Equipment

  • 1 Blender
  • 1 Mixing Bowl
  • 1 Baking Sheet
  • Parchment paper

Ingredients

  • 8 slices bread
  • 7 oz almond paste
  • 1/3 cup powdered sugar
  • 3 eggs
  • 1 tbsp + 1 tsp sugar
  • 2 tbsp orange juice
  • 3/4 cup milk
  • 1 tsp almond extract can substitute with vanilla extract
  • 1/2 cup sliced almonds
  • 1 tbsp powdered sugar, for topping optional
  • maple syrup for topping optional

Instructions

  • Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  • Add the almond paste, 2 eggs, and powdered sugar to a blender. Blend until smooth.
  • Add the remaining egg, milk, orange juice, extract, and sugar to a bowl and mix until smooth.
  • Dip 4 slices of bread into the custard and place onto the prepared baking sheet.
  • Divide the almond filling between the 4 slices and spread out.
  • Dip the remaining 4 slices of bread into the custard and top off the French toast.
  • Sprinkle the sliced almonds over the top.
  • Bake the French toast for 10 minutes or until the edges are lightly golden brown.
  • Let cool for 10 minutes.
  • Garnish with powdered sugar and serve with maple syrup if desired.
