Gluten Free Banana Donuts with Peanut Butter Frosting

Ingredients

Banana Donuts

  • 1 cup Gluten Free 1.1 flour
  • 1/2 cup ripe mashed banana
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 egg
  • 1 tsp vanilla extract
  • 1/8 cup brown sugar
  • 1/8 cup sugar
  • 1 1/2 tbsp Dairy Free milk

Peanut Butter Cream Cheese Frosting

  • 4 oz Dairy Free cream cheese, room temperature
  • 1/2 cup peanut butter
  • 1 cup powdered sugar
  • 1/4 cup peanuts, chopped, for topping

Instructions

  • Preheat the oven to 350 degrees. Spray a donut pan with nonstick baking spray and set aside.
  • Add the sugars, egg, and banana to a mixing bowl and mix on high for a couple of minutes until the sugar is mostly dissolved and it's a little frothy.
  • Mix in the milk and vanilla.
  • Add the dry ingredients and mix until just combined.
  • Divide the batter between the prepared donut pan.
  • Bake the donuts for 10 minutes, or until a toothpick comes out clean.
  • Let cool completely.
  • For the frosting, add the cream cheese, peanut butter, and powdered sugar to a bowl and mix until smooth and creamy.
  • Frost the donuts and sprinkle on the chopped peanuts. Enjoy!
