Creamy Chicken and Wild Rice Soup

Equipment

  • 1 stockpot

Ingredients

  • 1 lbs chicken breast, cut into cubes
  • 1 onion, diced
  • 1 1/2 cups celery, diced
  • 1 1/2 cups carrots, sliced
  • 1 cup mushrooms, roughly chopped
  • 3 cups chicken stock
  • 1 box wild rice with seasoning packet
  • 1 1/2 cups Dairy Free heavy cream
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tsp garlic, minced
  • 1 tbsp olive oil

Instructions

  • Heat the olive oil in a stockpot over medium heat.
  • Add the chicken, allowing it to lightly brown, 3-5 minutes.
  • Add the carrots, celery, and onions. Continue to sauté until the onions are lightly translucent.
  • Add the remaining ingredients and stir to combine.
  • Turn the heat to medium-low. Allow the soup to simmer for 20 minutes, or until the rice is tender.
