chicken breast, cut into cubes

onion, diced

celery, diced

carrots, sliced

mushrooms, roughly chopped

chicken stock

wild rice with seasoning packet

Dairy Free heavy cream

kosher salt

black pepper

fresh parsley, chopped

garlic, minced

olive oil
Instructions
Heat the olive oil in a stockpot over medium heat.
Add the chicken, allowing it to lightly brown, 3-5 minutes.
Add the carrots, celery, and onions. Continue to sauté until the onions are lightly translucent.
Add the remaining ingredients and stir to combine.
Turn the heat to medium-low. Allow the soup to simmer for 20 minutes, or until the rice is tender.
