Herb Crusted Prime Rib

Decadent Prime Rib is crusted with an Herbes de Provence and pepper rub for a new take on the holiday classic.

Equipment

  • 1 roasting pan
  • 1 digital thermometer

Ingredients

  • 8 lbs standing rib roast
  • 2 tbsp Herbes de Provence
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  • Allow your rib roast to sit out and come to room temperature, about an hour.
  • Mix together your salt, pepper, and Herbes de Provence.
  • Preheat the oven to 500 degrees.
  • Rub the entire rib roast with olive oil. Evenly sprinkle the rub mixture over the entire roast. Place in a roasting pan.
  • Allow the rib roast to cook for 15 minutes at 500 degrees.
  • Lower the heat to 325 and allow it to cook for about 1 1/2 hours, or until the internal temperature is 130 degrees for medium rare.
  • Let the rib roast rest for at least 20-30 minutes.
  • Slice and enjoy!
