Instructions
Banana Bread Cinnamon Rolls
Lightly oil a bowl and set it aside.
in a separate bowl add the warm water, yeast, honey, and half of the sugar. Mix to combine and allow it to sit for 5 minutes. It will become a little foamy and begin to bubble.
Add the butter, milk, salt, and remaining sugar to a saucepan on medium heat. Allow it to come to a simmer where bubbles are just forming on the outer edge, but don't let it boil. Remove from the heat and allow it to partially cool.
Place the banana in a mixing bowl with the mixer fitted with a paddle attachment. Mix until smooth.
Mix the yeast mixture into the banana mixture. Slowly pour in the milk mixture with the paddle running.
Add the flour, 1/2 a cup at a time, until fully incorporated.
The dough will be sticky. Lightly flour the doughball and place it into the oiled bowl. Cover with a kitchen towel and allow it to rise for an hour in a warm spot. It should double in size.
Lightly flour your work surface. Place the dough out onto the work area and begin to gently work it by folding it over about 8 times. Be careful not to press out too many air bubbles.
Roll the dough out into a 9x12 rectangle.
Mix together the butter, brown sugar, and cinnamon. Spread the mixture onto the dough.
Roll the dough tightly and cut into 9 rolls.
Butter a 9x11 baking dish. Place the rolls into the baking dish. Cover it tightly with plastic wrap and a kitchen towel. Allow them to rise for an additional hour.
Preheat oven to 350 degrees.
Remove the towel and plastic wrap from the baking dish.
Pour the heavy cream all over the top of the rolls.
Bake the cinnamon rolls for 30-35 minutes, or until golden brown. Allow to cool completely before frosting.
Peanut Butter Cream Cheese Frosting
Mix together the ingredients for the frosting until smooth and silky.
