Gluten Free Banana Bread Cinnamon Rolls

The flavors of banana bread come together with peanut butter cream cheese topped cinnamon rolls.

Ingredients

Banana Bread Cinnamon Rolls

  • 6 tbsp butter
  • 1/2 cup oat milk
  • 1 tbsp honey
  • 1/3 cup sugar
  • 1/2 cup water, warm
  • 1 tsp kosher salt
  • 1 pkg instant active yeast
  • 1 cup ripe banana, about 2 medium bananas
  • 3 1/2 cups Gluten Free 1.1 flour, plus an additional 1/2-1 cup for working the dough

Filling

  • 1 cup brown sugar
  • 1 1/2 tsp cinnamon
  • 4 tbsp butter, room temperature
  • 1 cup heavy cream

Peanut Butter Cream Cheese Frosting

  • 8 oz cream cheese
  • 1 tsp vanilla extract
  • 1 1/2 cups powdered sugar
  • 1 cup creamy peanut butter

Instructions

Banana Bread Cinnamon Rolls

  • Lightly oil a bowl and set it aside.
  • in a separate bowl add the warm water, yeast, honey, and half of the sugar. Mix to combine and allow it to sit for 5 minutes. It will become a little foamy and begin to bubble.
  • Add the butter, milk, salt, and remaining sugar to a saucepan on medium heat. Allow it to come to a simmer where bubbles are just forming on the outer edge, but don't let it boil. Remove from the heat and allow it to partially cool.
  • Place the banana in a mixing bowl with the mixer fitted with a paddle attachment. Mix until smooth.
  • Mix the yeast mixture into the banana mixture. Slowly pour in the milk mixture with the paddle running.
  • Add the flour, 1/2 a cup at a time, until fully incorporated.
  • The dough will be sticky. Lightly flour the doughball and place it into the oiled bowl. Cover with a kitchen towel and allow it to rise for an hour in a warm spot. It should double in size.
  • Lightly flour your work surface. Place the dough out onto the work area and begin to gently work it by folding it over about 8 times. Be careful not to press out too many air bubbles.
  • Roll the dough out into a 9x12 rectangle.
  • Mix together the butter, brown sugar, and cinnamon. Spread the mixture onto the dough.
  • Roll the dough tightly and cut into 9 rolls.
  • Butter a 9x11 baking dish. Place the rolls into the baking dish. Cover it tightly with plastic wrap and a kitchen towel. Allow them to rise for an additional hour.
  • Preheat oven to 350 degrees.
  • Remove the towel and plastic wrap from the baking dish.
  • Pour the heavy cream all over the top of the rolls.
  • Bake the cinnamon rolls for 30-35 minutes, or until golden brown. Allow to cool completely before frosting.

Peanut Butter Cream Cheese Frosting

  • Mix together the ingredients for the frosting until smooth and silky.
  • Frost the top of the cooled cinnamon rolls.
  • Enjoy!
