The Ultimate Apple Pie Cookies

Equipment

  • 2 baking sheets
  • 1 Mixing Bowl
  • Parchment paper

Ingredients

  • 1 cup Dairy Free butter
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 3 cups Gluten Free 1.1 flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup cooked pie crust, crumbled
  • 1 cup apple, thinly sliced

Instructions

  • Preheat your oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
  • Add your butter and sugar to a mixing bowl and mix on high for 5 minutes until the mixture is light and fluffy.
  • Mix in the eggs and vanilla.
  • Add in the dry ingredients and mix until just combined.
  • Fold in the apples and pie crust.
  • Use a scoop to portion out equal sized cookies.
  • Bake the cookies for 7-10 minutes until the edges are just lightly golden brown.
  • Transfer cookies to a wire cooling rack. Allow to cool completely.
