Gluten and Dairy Free Easy Crème Brûlée Donuts
sugar for sprinkling
Dairy Free pastry cream or vanilla instant pudding prepared according to package directions
Instructions
Gluten Free Donuts
Preheat oven to 375. Spray a donut pan with nonstick baking spray. This recipe makes 8 donuts.
Add the melted butter and sugar to a mixing bowl and mix for a couple of minutes.
Add the egg, vanilla, and yogurt and mix to combine.
Add in the remaining ingredients and mix until just combined.
Divide the batter in the prepared donut pan.
If adding berries, add thin slices of berries into the batter.
Bake for 10-12 minutes or until a toothpick comes out clean and they are golden brown.
Transfer the donuts to a cooling rack and allow them to partially cool.
Dairy Free Pastry Cream
Add the oat milk and vanilla to a saucepan on medium heat.
Add the sugar, egg and egg yolks, cornstarch, and salt to a separate bowl and whisk to combine.
Once the milk comes to a boil, turn the heat to low.
Add a ladle of the warmed milk to the egg mixture, whisking to combine. Add another ladle full while continuing to whisk. This will temper the eggs.
Pour the warmed egg mixture back into the saucepan with the milk and continue to stir.
Continue to stir until the mixture becomes thick and coats the back of a spoon. It should hold its shape when you use your finger to make a line down the back of the spoon.
Transfer the pastry cream to a bowl and cover.
Allow the pastry cream to completely cool in the refrigerator.
Gluten and Dairy Free Easy Crème Brûlée Donuts
Add the pastry cream or vanilla instant pudding to the center of each cooled donut.
Sprinkle sugar over the top.
Use a kitchen torch to lightly toast and caramelize the sugar.
