Gluten and Dairy Free Easy Crème Brûlée Donuts

These easy and delicious donuts are baked and then filled with pastry cream that is then lightly torched.

Ingredients

Gluten Free Donuts

  • 2 tsp vanilla extract
  • 5 oz Dairy Free unsweetened yogurt
  • 1 1/2 cups Gluten Free pancake mix
  • 3/4 cup sugar
  • 1/3 cup Dairy Free milk I like to use oat milk
  • 1/2 tsp baking powder
  • 2 eggs
  • 1/2 tsp kosher salt
  • 2 tbsp Dairy Free butter, melted
  • optional, berries, sliced I like to add blackberries

Dairy Free Pastry Cream

  • 2 cups oat milk
  • 3 egg yolks
  • 1 egg
  • 1 cup sugar
  • 1 tsp vanilla paste
  • pinch of salt
  • 4 tbsp cornstarch

Gluten and Dairy Free Easy Crème Brûlée Donuts

  • sugar for sprinkling
  • Dairy Free pastry cream or vanilla instant pudding prepared according to package directions

Instructions

Gluten Free Donuts

  • Preheat oven to 375. Spray a donut pan with nonstick baking spray. This recipe makes 8 donuts.
  • Add the melted butter and sugar to a mixing bowl and mix for a couple of minutes.
  • Add the egg, vanilla, and yogurt and mix to combine.
  • Add in the remaining ingredients and mix until just combined.
  • Divide the batter in the prepared donut pan.
  • If adding berries, add thin slices of berries into the batter.
  • Bake for 10-12 minutes or until a toothpick comes out clean and they are golden brown.
  • Transfer the donuts to a cooling rack and allow them to partially cool.

Dairy Free Pastry Cream

  • Add the oat milk and vanilla to a saucepan on medium heat.
  • Add the sugar, egg and egg yolks, cornstarch, and salt to a separate bowl and whisk to combine.
  • Once the milk comes to a boil, turn the heat to low.
  • Add a ladle of the warmed milk to the egg mixture, whisking to combine. Add another ladle full while continuing to whisk. This will temper the eggs.
  • Pour the warmed egg mixture back into the saucepan with the milk and continue to stir.
  • Continue to stir until the mixture becomes thick and coats the back of a spoon. It should hold its shape when you use your finger to make a line down the back of the spoon.
  • Transfer the pastry cream to a bowl and cover.
  • Allow the pastry cream to completely cool in the refrigerator.

Gluten and Dairy Free Easy Crème Brûlée Donuts

  • Add the pastry cream or vanilla instant pudding to the center of each cooled donut.
  • Sprinkle sugar over the top.
  • Use a kitchen torch to lightly toast and caramelize the sugar.
  • Enjoy!
