Easy Gluten Free No-Bake Banoffee Parfaits
These easy and delicious parfaits combine a light and creamy date caramel with fresh bananas.

Ingredients

Gluten Free graham crackers
1/2
cup
pecans

Dairy Free butter, melted

D'vash Organics dates, pitted
1/4
cup
hot water
2
bananas, sliced
14

coconut cream, just the solid cream
prepared Dairy Free whipped cream
Dairy Free chocolate shavings, optional
Instructions
Add the pecans and graham crackers to a blender. Blend until sandy in texture.
Add the melted butter and mix to combine. Set aside.
Add the pitted dates to a bowl. Top with the hot water and allow to sit for 10 minutes until softened.
Add the softened dates and the solid coconut cream to a blender. Blend until smooth. This may take a couple of cycles to achieve the right texture.
To assemble your parfaits, add a sprinkle of the pecan-graham cracker mixture to the bottom of your parfait glasses.
Top with the sliced bananas.
Add dollops of the date mixture over the bananas.
Add Dairy Free whipped cream and garnish with chocolate shaving is adding.
