Add the vegetables, olive oil, Weekend BBQ seasoning, and salt to the baking dish and toss to combine.
Place the chicken on top of the vegetables. Sprinkle a little salt and Weekend BBQ on the chicken.
Bake for 25 minutes.
At the 25-minute mark brush the barbecue sauce on the chicken and bake for another 10-15 minutes. The internal temperature should be 165 and the veggies tender.
