Gluten and Dairy Free Oatmeal Cookies with Dates

These nostalgic classic cookies get an update with the addition of sweet dates.

Ingredients

  • 1 3/4 cup Gluten Free 1.1 flour
  • 3 cups oats
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 1 tbsp honey
  • 1 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup Dairy Free butter, room temperature
  • 1 cup dates, finely chopped
  • 1 1/2 cups walnuts, chopped

Instructions

  • Preheat your oven to 350 degrees. Line 4 baking sheets with parchment paper and set aside.
  • Add your butter and both sugars to a bowl and beat on high for 3 minutes.
  • One at a time add your eggs, mixing in between.
  • Add the rest of your ingredients and mix until just combined. Don't over mix.
  • Using an ice cream scoop, portion your cookies and place on prepared baking sheets. Don't over crown. You want about 2" between each cookie.
  • Bake 12-16 minutes or until lightly golden brown.
  • Allow to cool on baking sheets.
