Gluten and Dairy Free Cannoli Crepes with Pistachios

With a couple of pantry staples these crepes come together easily with fluffy Dairy Free ricotta and a double dose of pistachios

  • Mixing Bowl
  • Large skillet

Ingredients

  • crepe mix
  • 8 oz Dairy Free ricotta, room temperature
  • 1/8 cup powdered sugar
  • 1/8 cup Dairy Free mini chocolate chips, plus extra for serving
  • 2 tbsp pistachio paste
  • 2 tbsp pistachios, chopped

Instructions

  • Prepare the crepes according to the package directions. I like to use oat milk but use what you like.
  • In a small bowl combine the ricotta and powdered sugar. Mix until creamy and fluffy. Fold in the chocolate chips.
  • Fold each crepe. Top each crepe with a couple tablespoons of the ricotta mixture.
  • Top with a drizzle of pistachio paste, pistachios, and extra chocolate chips.
  • Enjoy!
