The Best Gluten Free Cornbread

This is the ultimate recipe for tender and moist cornbread that is both Gluten and Dairy Free.

Equipment

  • Mixing Bowl
  • 10" cast iron skillet or 9x9 baking dish

Ingredients

  • 1 cup cornmeal
  • 2 cups Gluten Free 1.1 flour
  • 1 1/4 cup sugar
  • 1 1/2 tsp kosher salt
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 2 eggs large
  • 1 tbsp baking powder
  • 1 cup creamed corn

Instructions

  • Preheat oven to 375 degrees.
  • Mix the oil and sugar on high in a mixing bowl for 3 minutes. Add the rest of the wet ingredients and mix to combine.
  • Add your dry ingredients and mix until just incorporated. Don't over mix.
  • Pour the batter into an oiled cast iron skillet or baking dish. Dot with pats of Dairy Free butter if desired.
  • Bake for 25-35 minutes, or until the top is golden brown and a toothpick comes out clean.
  • Allow to cool for 10 minutes. Enjoy!
