Gluten Free Rich Pot Roast Beef Stroganoff

Leftover pot roast is quickly braised in a rich and savory sauce and served over fresh Gluten Free pasta.

Ingredients

  • 1 cup cooked beef (I used pot roast) or ground beef*
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 pkg cremini mushrooms, sliced
  • 1 tsp garlic, minced
  • 1/2 tsp thyme
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 cup Dairy Free heavy cream
  • 1 tsp browning sauce
  • 1/2 cup Dairy Free sour cream
  • 2 cups Gluten Free pasta, cooked
  • parsley for serving

Instructions

  • Heat the stock pot over medium heat.
  • Add your olive oil and heat before adding the onions and mushrooms.
  • Once onions are translucent and mushrooms beginning to brown, add garlic, thyme, salt and pepper, browning sauce, beef broth, heavy cream, beef, and sour cream. Cook for 10 minutes until the sauce is thickened.
  • Stir in the cooked pasta and top with fresh parsley. Enjoy!
