Gluten Free Goji Berry Granola Tartlet Parfait
This baked granola tartlet is loaded with sweet tart goji berries, oats. figs, and raisins with the nutty combination of almond and hazelnut flours. Topped with roasted fruit and dairy free yogurt it's a fun and healthy start to the day.

Ingredients
Goji Berry Granola Tartlet

cup
oats
2
tbsp
flax seeds
1/2
cup
raisins
1/2
cup
dried figs
1/2
cup
goji berries
1
tbsp
honey
1/2
cup
almond flour
1/2
cup
hazelnut flour
Dairy Free vanilla yogurt for serving
Roasted Grapes and Gooseberries

cup
green grapes
1
cup
gooseberries
Instructions
Goji Berry Granola Tartlet
Preheat the oven to 350 degrees.
Line a 4x6 baking dish with parchment paper and set aside.
Add all of the ingredients to a blender or food processor and pulse until crumbly.
Press the mixture into the baking dish and bake for 15 minutes. Allow to cool
Roasted Grapes and Gooseberries
Add grapes and gooseberries to a baking sheet. Roast in the oven for 15 minutes.
To assemble, add a slice of the goji berry granola tartlet to a plate. Top with yogurt and roasted grapes and gooseberries. Enjoy!
