What exactly are goji berries? Sometimes called wolfberries, you will usually find these crimson super fruits in dried form. They’re chewy and a little soft with a flavor that’s similar to a a cross between a dried cranberry and cherry.

Goji berries are nutrient dense in both vitamins and minerals. Packed with vitamin C, iron, fiber, and vitamin A, these tasty treats of nature are bursting with amazing health benefits.

Goji berries aren’t the only nutrient super stars in this Gluten Free Goji Berry Granola Tartlet parfait. Flaxseeds also add their Omega 3’s and dietary fiber. They also have the added benefit of making you feel full and satisfied longer.

Putting the Parfait in Gluten Free Goji Berry Granola Tartlet Parfait

This fun and easy breakfast treat is not only easy to prepare, it’s components call all be assembled ahead of time. Let’s start with the goji berry tartlet.

This is basically a baked granola. You’re going to add all of your tartlet ingredients to a blender or food processor and pulse until crumbly. The honey in this dish acts as not just a sweetener, but also the binder. Dried figs and raisins also provide that perfect texture to hold everything together.

Once baked, this granola tartlet can be cooled and cut for later. it is perfect for breakfast on the go as is, but we’re turning it into a parfait.

The next portion of this Gluten Free Goji Berry Granola Tartlet Parfait are roasted green grapes and gooseberries. As they roast in the oven, they will become slightly slumpy and soft as their natural sweetness intensifies. They bring fresh flavor and texture to this colorful dish. I like the sweet tart combination of green grapes and gooseberries, but feel free to roast your favorite fruit.

The last portion of this gluten free and dairy free breakfast is dairy free yogurt. I recommend something thick and luscious to crown the top. I use vanilla flavored in this recipe but again, use what you like.

Gluten Free Goji Berry Granola Tartlet Parfait

This baked granola tartlet is loaded with sweet tart goji berries, oats. figs, and raisins with the nutty combination of almond and hazelnut flours. Topped with roasted fruit and dairy free yogurt it's a fun and healthy start to the day.

Equipment

  • 4×6 baking dish
  • Parchment paper
  • Blender/food processor

Ingredients

Goji Berry Granola Tartlet

  • 1 cup oats
  • 2 tbsp flax seeds
  • 1/2 cup raisins
  • 1/2 cup dried figs
  • 1/2 cup goji berries
  • 1 tbsp honey
  • 1/2 cup almond flour
  • 1/2 cup hazelnut flour
  • Dairy Free vanilla yogurt for serving

Roasted Grapes and Gooseberries

  • 1 cup green grapes
  • 1 cup gooseberries

Instructions

Goji Berry Granola Tartlet

  • Preheat the oven to 350 degrees.
  • Line a 4×6 baking dish with parchment paper and set aside.
  • Add all of the ingredients to a blender or food processor and pulse until crumbly.
  • Press the mixture into the baking dish and bake for 15 minutes. Allow to cool

Roasted Grapes and Gooseberries

  • Add grapes and gooseberries to a baking sheet. Roast in the oven for 15 minutes.
  • To assemble, add a slice of the goji berry granola tartlet to a plate. Top with yogurt and roasted grapes and gooseberries. Enjoy!
