    Who loves an easy breakfast? I love having something I can grab on the go when I have those early morning appointments. These Gluten Free Almond Double Berry Muffins are the perfect easy breakfast while being great any time of day.

    These muffins combine fresh ingredients with a pantry staple for a delicious and healthy treat. Pack them in lunches or serve them at brunch, they're sure to be a new instant favorite.

    These Gluten Free Almond Double Berry Muffins pack a bright burst of berry flavor. Combining the ease of a mix with the just picked pop of raspberries and blackberries they have bright fresh flavor in every bite.

    Flavor should never be sacrificed when it comes to easy recipes, and neither should keeping it healthy. For this recipe I am using Josie's Best The Muffin & More. I love this mix because it works as a 1 to 1 swap for flour. It's a great canvas for this recipe while also being ideal for so much more.

    In addition, it's also free of the top 8 allergens. Besides being Gluten Free it's also Dairy Free, soy free, and peanut free. It allows you to create quick recipes such as this and feel good about serving them to your family and friends.

    Bringing that sweet yet tart flavor from the first bite to the last are a combination of raspberries and blackberries. They not only provide a taste of sunshine, they also offer up texture.

    Slivered almonds also provide texture and flavor in these muffins, giving that crunch we all crave. The almond flavor is echoed with the addition of almond extract.

    Baking Up Your Gluten Free Almond Double Berry Muffins

    Easy is the theme with these poppable treats. Get out your mixing bowl and wash your berries. I'll take you step by step.

    • Pregame! Preheat your oven to 350 degrees. Spray your muffin tin with nonstick baking spray and set aside.
    • Fresh berries are the best! Not only are they going to bring the best flavor they also have that tender texture.
    • Make sure your Dairy Free butter is at room temperature. This will allow you to easily mix everything together without over mixing.
    • Mix all of your ingredients together except for the berries.
    • Fold in the berries.
    • Top the muffins with slivered almonds. We love that crunch!
    • Bake for 20-30 minutes, or until a toothpick comes out clean.

    Equipment

    • Mixing Bowl
    • muffin tin

    Ingredients

    • 2 cups Gluten Free muffin mix
    • 3 eggs
    • ¾ cup sugar
    • 2 tsp baking powder
    • ¼ tsp baking soda
    • 1 cup oat milk
    • 1 tsp almond extract
    • ½ cup Dairy Free butter, room temperature
    • 1 cup oats
    • ½ cup blackberries
    • ½ cup raspberries
    • ½ cup slivered almonds *reserved for topping

    Instructions

    • Preheat oven to 350 degrees. Spray a muffin pan with nonstick baking spray and set aside.
    • Mix together all of the ingredients except for the berries.
    • Fold in the berries.
    • Divide the batter between the 12 cups in the muffin tin.
    • Top with slivered almonds.
    • Bake for 20-30 minutes, or until a toothpick comes out clean.
