How to Make Herb Crusted Prime Rib

There are two important factors to creating this recipe, picking a quality piece of meat, and also watching your temperature. It doesn’t take much to impress your friends and family every single time with this meal.

Time needed: 3 hours and 30 minutes

The hardest part of this recipe is the anticipation of that first slice while you patiently wait for it to rest when it comes out of the oven.

  1. Pregame

Allow your standing rib roast to come to room temperature. Preheat your oven to 500 degrees.

  2. Rub

Mix your seasonings together. Rub the entire roast with olive oil and evenly sprinkle the rub mixture over the entire roast. Place the prime rib roast in a roasting pan

  3. High Heat

Place the roasting pan in the oven and allow the rib roast to cook for 15 minutes at 500 degrees. This blast of heat will sear the outside and begin developing the crust.

  4. Cook

Turn the heat to 325 degrees. Allow the rib roast to cook for approximately 1 1/2 hours, or until the internal temperature is 130 degrees for medium rare.

  5. Rest

Allow your roast to rest for at least 20-30 minutes. This will allow the juices to redistribute into your beef and ensure that you have the juiciest of prime rib roasts.

  6. Serve

Slice into that beautiful beast and wow your friends and family!

Variations

While this Herbes de Provence rub works perfectly on this show stopping prime rib, it also works on any cut of beef. Try it the next time you grill a beef tenderloin or New York strip steak.

Tools

The tools for a successful cook of a prime rib are as important as the quality of the beef itself. This Herb Crusted Prime Rib is a special occasion cut, and you want to ensure that you cook it to perfection. Using a roasting pan will elevate the beef allowing air to flow all around it while preventing the bottom from sitting in liquid and steaming. Don’t forget to save those pan drippings for a delicious jus to serve with your beef.

In addition to a roasting pan using an instant read digital thermometer will ensure that you cook your beef to your desired temperature. Always measure from the middle of the fattest part of the beef and stay away from the bone.

Storage

As delicious and decadent as that first meal of prime rib is, the leftovers are equally as delicious. They’re great for everything from serving up a prime rib hash for brunch to French dip sandwiches later in the week. Keep your meat stored in plastic bags or an airtight container in the refrigerator for 4-5 days.

Top Tip for Herb Crusted Prime Rib

There is something magical about that first slice of prime rib. To make sure that the juices remain in your rib roast and don’t wind up all over your cutting board, allow your prime rib to rest for at least 20-30 minutes. You can lightly tent your roast with foil while you place your sides in the oven if you like.
